Inspired by all those fine recipes.
This is what i always get when i'm in the US.
Cranberry Orange Bread
1½ cups fresh or frozen (thawed) cranberries
1 tsp. salt
½ cup chopped nuts(optional)
½ tsp. baking soda
1 tbs. grated orange peel
2 tbs. shortening
2 cups all-purpose flour
¾ cup orange juice
1 cup sugar
1 large egg, well beaten
1½ tsp. baking powder
Generously grease and flour a 9" x 5" x 3" loaf pan.
In a bowl, mix flour, sugar, baking powder, salt, and baking soda. Cut in shortening. Stir in orange juice, egg, and orange peel, mixing just enough to moisten.
Fold in cranberries and nuts. Spoon into prepared pan.
Bake at 350° for 60 minutes, or until wooden pick inserted in center comes out clean. Cool on rack 15 minutes. Remove from pan and cool completely. Wrap and store overnight.
Delicious.
